Berrys Creek - Oak Blue (VIC)
Berrys Creek blue is made with a firmer texture and is similar to a cross
between Stilton and Gorgonzola and is aged for 10 - 12 weeks.
Ashgrove Farm - Vintage Cheddar (TAS)
Ashgrove Farm Cheddar's are graded at 4 months of age and selected
for ageing to either 18 months or 2 years prior to release. This vintage
cheddar has a sharp, strong and nutty flavour with a flaky body due
to the the extended maturation time.
Maffra - Brie (VIC)
Maffra brie is only made once a month for the local district market.
Its this small production and loving care that allows Ferial to produce
one of the best kept secrets in the cheese industry.
Donnybrook Farmhouse - Pasterello (VIC)
This is a strong flavoured pecorino made with sheep's milk as tradition
states. It has a deep golden colour with a hard, almost crunchy texture.
Aged for approximately 2 years, the cheese develops a strng, complex
flavour and a full aroma.
